Ingredients 1 tablespoon plus 1 teaspoon white-wine vinegar 3 tablespoons extra-virgin olive oil ½ teaspoon sugar Coarse salt and freshly ground pepper 1 head escarole, cored and thinly sliced crosswise 1 large head frisee, cored and torn into bite-size pieces 6 heads radicchio, cored and thinly sliced Directions In a large bowl, whisk together vinegar, oil, and sugar.
