Ingredients :: 

1 cup pitted dates
1/2 cup anjeer dried
1/2 cup roasted almonds
1/2 cup pistas roasted and salted
1/2 cup walnuts roasted

Recipe :

1. Grind almonds, pista and walnuts to coarse powder. Grind dates and anjeer till they form a lump.
2. Mix both grinded dryfruits in a bowl and mix till the come together.
3. Add the mix to modak moulds and make modaks.
4. Chill them in Refrigerator for an hour before serving.

1/2 cup over night soaked tapioca beads
500ml milk
1/2 cup sugar
1/4 cup mix dryfruits of choice
cardamom powder

Recipe :

1. In a pan add milk and bring it to boil.
2. Add tapioca to the boiling milk and keep boiling till it starts to thicken.
3. Add sugar and cardamom powder and boil till sugar dissolves.
4. Add mixed dryfruits and turn off the burner.
5. Chill it in Refrigerator for an hour before serving.
6. additionally you can add condensed milk as well for a richer taste. Reduce the quantity of sugar by half and add that much condensed milk. Also you can add a few strands of saffron.

2tsp sugar powdered
1tbsp elaichi powder
few cardamom pods

1. Boil milk in a deep pan, add lemon juice or vinegar and curdle it.
2. Once curdled take one boil and separate the whey from water. Let the whey become completely dry.
3. Add the whey and sugar in a pan and mix well till the dough comes together.
4. Add cardamom powder and mix well. Let it cool completely.
5. Make small balls and flatten them. Decorate with cardamom pods and serve chilled.
